Lemon Crumb Bars

Step 1: Prep for Baking

Preheat your oven to 350°F (175°C).

Grease a 9×13-inch baking pan or line it with parchment paper, leaving an overhang on two sides for easy removal.

Step 2: Make the Crust & Topping

In a large bowl, use an electric mixer to cream the softened butter and sugar until light and fluffy.

In a separate bowl, whisk together the flour, baking powder, and salt.

Gradually add the dry ingredients to the butter mixture, mixing on low speed until the dough is crumbly and just combined.

Set aside 1 cup of the crumb mixture for the topping. Press the remaining mixture firmly and evenly into the bottom of your prepared pan to form the crust.

Step 3: Whisk the Zesty Filling

In a medium bowl, whisk the eggs until they are well-beaten and smooth.

Add the sweetened condensed milk, fresh lemon juice, and lemon zest. Whisk vigorously until the mixture is completely smooth and slightly thickened.

Step 4: Assemble the Bars

Pour the lemon filling evenly over the prepared crust.

Sprinkle the reserved 1 cup of crumb mixture evenly over the top of the lemon layer.

Step 5: Bake to Perfection

Bake for 25-30 minutes, or until the crumb topping is a light golden brown and the filling is set.

Place the pan on a wire rack and allow the bars to cool completely in the pan. For cleanest cuts, chill in the refrigerator for at least an hour after cooling.

Step 6: Slice and Serve

Use the parchment paper overhang to lift the entire slab of bars from the pan.

Dust with powdered sugar if desired, then slice into squares with a sharp knife.
